Grits

Ingredients:
2 quarts milk (or for creamy Grits, 1 quart milk and 1 quart real cream)
1/4 pound butter
1 teaspoon salt
1/2 teaspoon pepper
2 cups grits
2 teaspoons finely chopped garlic (optional, for savory Grits)
2 teaspoons finely chopped shallots (optional, for savory Grits)
2 teaspoons finely chopped fresh thyme (optional, for savory Grits) 2 teaspoons olive oil (optional, for savory Grits)
1cup Pimento Cheese (page 139) (optional, for Pimento Cheese Grits)
Instructions:
- Bring milk, butter, salt, and pepper to a boil in medium saucepan. Be careful not to scorch.
- Whisk in grits. Turn down to simmer. Cook for 40 to 45 minutes, stirring often.
Customize your Grit:
- For creamy Grits: Add real cream in the last few minutes of cooking.
- For savory Grits: Add garlic, shallots, thyme, and olive oil before cooking.
- For Pimento Cheese Grits: Fold in Pimento Cheese to prepared Grits.
